Serves 4 In February of 2020 my vegan pal Jaden Oasis (world traveler and meditator extraordinaire) visited me in Big Water. He prepared these Tacos one night, telling my children and I his stories of time spent in far away villages, where he'd walk from a hut down to a market and purchase some beans and avocados with which to prepare this "simple man's" recipe he designed. It's simplicity is precisely what led to it becoming an absolute staple in my household for many, many years to come. My kids request it between 2 and 4 times a month, because of how quickly it comes together while still being absolutely delicious. Tip: Presentation and flavor go even further when you serve Guacos on alternating white and blue corn taco shells.
